Pre-diabetes is a growing public health concern marked by elevated blood glucose levels and dysregulated lipid profiles. As the search for natural dietary solutions intensifies, Spirulina platensis, a blue-green microalga, has attracted interest due to its promising metabolic benefits. This review critically examines the available literature on the efficacy of spirulina-fortified cookies in modulating glycemic response and lipid parameters among pre-diabetic individuals. The review discusses mechanistic underpinnings, relevant clinical and preclinical findings, limitations of current research, and future research directions, emphasizing the role of functional bakery products in preventive nutrition.
