Cereal grains are the most important source of food and have a significant role. Millets are a set of highly variable and small-seeded plant species indigenous to many areas of the world. Millets are of value, especially in semiarid regions. Millets have a low glycemic index and prevent diabetes. Millets are gluten-free. Made of millet-based cookies is very tasty and nutritious for our health. When millet flour was fortified with soy flour with jaggary powder replacement of artificial sugar it gave a high level of protein of 11.88% of cookies. Soy flour is a high protein and an excellent complement to lysine-limited cereal protein. Cookies are good carriers of nutrients like carbohydrates and fat. These cookies were studied with respect to physical, chemical, textural, and sensory analysis, and cookies with 20% soy flour and 80% millet flour. Protein-energy malnutrition can be combated with such protein cookies. Most people consume cookies during breakfast, and snacks to control their hunger. In the market, there are so many cookies available, but not all cookies are nutritious. Millet cookies are very helpful for PCOD problems. These cookies are best for storage. Not only PCOD it also helps in diabetes. The water activity and moisture values were low, which can provide greater stability during storage. Enriched with soy flour is a rich source of vitamin B complex and calcium. These cookies also reduce cholesterol and improve heart health.
