Abstract:

This study examines the biochemical effects of herbicide residues on the volatile composition and sensory quality of red wines. The main objectives were to quantify the herbicide residues in red wines and evaluate their impact on the volatile profile, specifically esters and alcohols, which are crucial for wine aroma and flavor.
